    carrot is my favourite because it is packed with loads of nutrients and so so beneficial for overall health specially for eye sight and skin. i mostly like to have it in mixed vegetable curry and also i prefer carrot delight and carrot cake.

    Broccoli. It's nutritious and delicious. I eat it raw every day. I don't like the smell of cooked broccoli, but I deal with it for broccoli and cheese soup smile

      Sunshine625 (Linda), have you ever had broccoli slaw? It's like coleslaw, but instead of grated cabbage, grated broccoli stems are used.

    I love broccoli. I love broccoli steamed the best. I also love broccoli raw in salads, I love cream of broccoli soup, and I love a veggie plate with broccoli dipped in ranch or dill dressing. Did I say I love broccoli? smile

    I am very fond of green peas with pearl onions; I also like broccoli, and green beans, both of which are delicious with lemon or garlic pepper.
    Carrots, I like, but only raw.  I do not like the change in flavor when they are cooked.
    I will also eat raw broccoli and cauliflower.
    I have a yummy recipe for cauliflower, but it earns zero points on the health scale; it's fried in batter.

    It's hard to choose just one - I'll get hooked on one for a little while, then switch to something else.  Right now I'm all about cauliflower.  I just think it tastes good.  I love it steamed with some ketchup on top smile

    Uh oh! I have to be different here. My favorite vegetable is spinach! When I was little, I used to trade other kids my dessert for their share of spinach. I've always thought it tasted heavenly.

    My favorite way to eat it? Right of the can. Yep. If I am eating it just for myself, I don't even bother to heat it up. I just drain it and eat it with a little black pepper.

    Spinach would have to be followed closely by boiled zucchini, and boiled cabbage. And a less common green--poke salad! Yum!

      I like spinach very well--but it must be FRESH!  Canned veggies, especially canned spinach just gag me!

    I love tomatoes.  They make everything better: meats, salads, stir-fry, soup, even pie.  Some say it's a fruit but I love it as a veggie.

    i do love and eat all vegetables. but if i choose one, it is carrot. it can be eaten raw. i like  sweet dishes of carrot especially carrot pudding and carrot halwa very much. i like carrot in salads and soups too. carrot is rich in vitamin A which is essential for eyes. Also it is very essential for skin.

    Bruseel sporouts is my best vegetable, I steam the fresh greens and add some olive oil, with garlic  finely chopped and add some vinegar with salt mix  and taste great.

    I didn't know so many people liked broccoli so well. That is my favorite vegetable. I like it raw, in salads and steamed lightly. So healthy!

    I like anything green and fresh. Green peas, Beans, Cabbage, Capsicum, Spring onions and Fresh Green Coriander or Mint and so on.
    The fresh greens are best enjoyed in salads or soups. Least cooking, so that their nutrients are intact.

    I adore yellow summer squash steamed with onions. I like squash so much that I eat two servings whenever I prepare it and that's my entire meal. Nothing else required!

    I found a recipe for cauliflower on Pinterest. Totally delicious. Baked with olive oil, lemon juice, chives, garlic powder, adding Parmesan cheese at end. Full of nutrients and outright lip smacking recipe. Go for it.

    My favorite is asparagus, but it has to be the skinny kind (and green, not white).  It complements so many meats, such as pork, chicken, fish and is even good in omelets.  I prefer it steamed with a little bit of butter.  No need for salt or pepper.  It is so nutritional and I just love the unique flavor.

    I adore parsnips and carrots baked in the oven. I slice them up lengthwise, sprinkle a bit of sea salt and olive oil on them. Mmmmmm.
    The next one would be beets roasted with horseradish sauce.

    Ad if some southerner would give me the recipe to making collard greens, I would sooo enjoy that! I had a very good friend that would make them for me but would never teach me how to do it. Something about guarding a family recipe was always mentioned when I asked.
