Homemade Pancake Mix

    1 1/2 cups self rising flour
    1 tsp. sugar
    1 tsp. vanilla
    1 egg
    1 tbs. oil
    1 cup milk

    You can even add your favorite fruit.
    Mix all ingredients together.
    Before cooking the pancakes make sure your pan is hot enough. Let a drop of water fall into the pan if it sizzles then it's ready. Turn only once.

      I have put finely chopped peaches in my pancake mix. it is very good.

    I've also added sliced bananas, chocolate chips (ok, for fun!).  I've also added butter and maple syrup before adding the batter.  mmmm tastes great, but I wouldn't do this every Sunday!  lol

    For an afternoon treat mix 1 can nibblets corn and 1 can cream corn and cook on the Bar-b-q (need a griddle LOL) may have to adjust the other liquids kids love em with light syrup or icing sugar

    I used to make all my own pancakes from a similar recipe except I used bisquick.  I had my grandmother's cast iron round griddle that was originally used hanging over a fire before they had stoves.  Yes, I was taught how to test the griddle with that ever so important drop of water and you never no never greased your griddle.  The oil in the mix kept the pancakes from sticking.  Wait until the pancakes bubble and the edges are cooked enough to turn your pancakes.  Homemade are the best.  I only wish I knew where my old round griddle was.  It got lost in one of my moves.

    Oh one more thing -- My mom made the best griddle cookies on that old griddle too.  They were my Christmas Spice Cookie recipe.

    That's close to the one I use!  I have a recipe I call "The Ones."

    1 c flour
    1 egg
    1 c milk
    1 T oil
    1 t baking powder
    1 t sugar (helps with browning)

    I often replace the milk with 1 c yogurt, or buttermilk when I happen to have it on hand.  Now I'm hungry!

    pancakes were not breakfast food in our house.  I just made sausage and pancakes for dinner last night.

    I like to sneak a few table spoons of flax seed to my pancakes for the family and I use a white wheat flour.  Great tips from everyone smile
