    Yum Nmdonders-

    In a grill pan nothing is better that chunks of canned pineapple (particularly marinated with terriyaki sauce), cherry tomatoes and shitaki mushrooms.  On skewers go with small new red potatoes (partially peeled), 2 inch slices of corn on the cob, chunks of green and red bell peppers and chunks of purple onions.  The onions and peppers usually benefit from a couple minutes of pre-microwaving to be done at the same as the other vegis.

    Some folks really like hot peppers grilled too.  Fresh Serranos, pablanos, or jalepenos grill really well.  Just halve, seed (and remove the white membrane) and grill until both sides are blistered.  The skins can be wiped off if they are put into a plastic bag and allowed to steam a few minutes after grilling.  I always like the charred skins, but not everyone does. (Don't forget to wash your hands after handling the hot chilis.)

    Corn on the cob is good. Leave the husks on, then soak in a sink full of cold water for about an hour. Remove, and pat dry. Place on the grill with husks still on, above medium heat, for about an hour. Another one is baked potatoes. Wash potatoes, wrap in foil, bake until tender. Split the potatoes, add cooked onion, and shredded cheese, continue cooking until cheese melts. Good as a side with pork chops. Yellow squash is another one. Wash, and slice squash, place in a shallow pan. Add about three table spoons of butter, or coconut oil, sprinkle with garlic powder, to taste. Saute until until tender.

    I grill corn and marinated squash.  Like "winresources" stated - I love marinating many varieties and skewering them.

    In a grill pan or aluminum foil packet you can grill anything. We used to grill sliced potatoes, onions, garlic and olive oil in a foil packet. I also love zucchini seasoned and drizzled with olive oil cooked on the grill.

    gosh, you can bbq so many...tomatoes, zuchinni, summer squash, corn, mushrooms, eggplant, scallions, asparagus, onions, bell pepper, potatoes, sweet potatoes. All good whether they're cooked directly over coals or wrapped in foil...with a little olive oil and butter. And I'm sure I've missed some!!!!
