    The perfect salad.

    In the heat of the summer, sometimes lunch or dinner is simply a salad at my house. It can be insalata caprese, cobb salad, an anti pasta plate, chef salad, a ploughman's lunch. Summer meals become lighter and less complicated. Make ahead salads like macaroni salad, taboule, or a cold rice salad are included. What is your favorite salad meal?

    My cucumber & tomato cous cous salad.  I love that stuff and eat it for dinner or lunch sometimes.  I make it ahead and it lasts me a couple of days.

    I guess my favorite would be classified as a garden salad because it's made with your normal salad stuff - tomatoes, peppers, onions, carrots, and cucumbers. But instead of lettuce, I prefer spinach.

    My favorite salad to make for dinner in the summertime is a classic macaroni and tuna salad. I add canned salmon and other special ingredients, my family loves it.

      janshares, really your idea is a favorite cool summer dish. That is the kind of recipe that I make a double batch  and eat for two (or three) meals. Thanks. You reminded me of another good cold summer meal.

    We also enjoy having a cold salad on a hot summer day. One favorite is a chicken salad with Greek yogurt in place of the traditional mayo. We load it up with green seedless grapes, dried cranberries, crisp celery, chopped walnuts, grated carrot for added color and crunch, and fresh tarragon and a splash of fresh lemon juice.

      I know for sure we could be friends or neighbors. That sounds like a excellent meal. I am using Greek yogurt to replace mayo or sour cream in most recipes. Thank you for reading my hub pages.

    A fresh garden salad with the usual fixings like cucumbers, lettuce, tomatoes, black olives, scallions .etc...  but we add grilled steak tips or chicken to it. It's easy and delish!!
