Bharwan Parwal Recipe
This is an interested dish of stuffed snake gourd <Parwal/Potol>stuffed with onion,vegetable and spices.This is a very common dish among Bengali People but I add some twist in it to make it more modern.We generally saw that our moms were using oven to prepare it but I prepared this in microwave to save time.Hope you people like this new dish.....

Cooking Mode: Microwave
What you need:
- 400 gms Snake Gourd, peeled,cut into 2" long pieces,slit and deseeded
- 1 tsp cumin seeds, roasted
- 1 tbsp coriander seeds, roasted
- 1 tsp fennel seeds, roasted
- 1 tbsp desiccated coconut powder
- 1 and 1/2 tsp amchoor powder
- 1 tsp Kashmiri Chili Powder
- 1 tsp Turmeric Powder
- 1/4 tsp asafoetida
- 2 medium size potatoes, boiled and mahed
- 1 tbsp oil
- 1/2 tsp cumin seeds
- 3 medium size onion, finely chopped
- To taste Salt
Method:
- Combine the cumin seeds,coriander seeds,fennel seeds and desiccated coconut and grind to fine powder.
- Mix in aamchoor powder,Kashmiri red chili powder,turmeric powder,asafoetida and salt.
- Mix well and smear half of the masala on the inside of the deseeded Parrwals
- Mix the remaining masala into the smashed potatoes and stuff this into the parwal
- In a casserole, add oil and microwave on medium power of 5 secs.Mix the cumin seeds and onions and microwave for 3 mins.
- Toss in the prepared parwal pieces,cover and microwave in high power for 15 mins,pausing and stirring after every 5 mins.Mix in salt and microwave for 30 secs.
- Leave to stand for 5 mins before serving.
